Combine 1 cup light coconut milk and ¼ cup
water in a medium saucepan over medium-high heat; bring to a boil. Stir in 1
cup uncooked long-grain white rice. Reduce heat to low; cover and simmer 17
minutes or until liquid is absorbed. Let stand 5 minutes. Stir in ¼ cup chopped
cilantro.
